You will need:

Ingredients for 2 chocolate moulds

    • 500g milk chocolate
    • 180g Saracino Pure Pistachio 100% food flavouring – no need to add tahini due to its rich pistachio flavour
    • 200g chopped dry kataifi pastry
    • 1 tablespoon butter
    • A handful of chopped pistachio nuts (optional)

Step 1: Melt the Milk Chocolate

  1. Chop the milk chocolate into small pieces for even melting.
  2. Use a double boiler or microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  3. Pour a thin layer of melted chocolate into the bottom of each mould to create a base. Set aside to slightly firm up.

Step 2: Prepare the Kataifi Filling

  1. Chop the dry kataifi pastry into smaller pieces.
  2. Heat a pan over medium heat and melt the butter.
  3. Add the kataifi pastry and fry until golden brown, stirring continuously to avoid burning.
  4. Once golden and crisp, remove from heat and mix in the Saracino Pure Pistachio food flavouring and chopped pistachio nuts until evenly coated. The Saracino flavouring not only enhances the taste but also provides an extra layer of crunch to the filling.

Step 3: Assemble the Chocolates

  1. Spoon the pistachio-kataifi mixture into each chocolate mould, filling it about ¾ full.
  2. Cover the filling with the remaining melted chocolate, ensuring a smooth and even finish.
  3. Gently tap the mould on a flat surface to remove air bubbles.
  4. Place the mould in the refrigerator for at least 1 hour or until fully set.

Step 4: Unmould and Serve

  1. Once the chocolates are firm, carefully pop them out of the mould.
  2. Serve immediately or store in an airtight container in a cool, dry place.
